Roasted wheat refers to the wheat grains or wheat berries which are dry heated, generally in the roasting ovens. The roasting of grains like wheat is done to stop the damage caused by direct cooking of these grains.
The nutritional values of the whole grain gets reduced when it is cooked directly, as, its outer shell weakens and its protein and carbohydrate density gets reduced too. But, dry roasting of these grains helps in limiting the damage and at the same time, just softens the grain by making it edible for consumption.
